Because every now and again, you need a dinner that is so easy there's no excuse not to cook.
Ingredients:
1 bag Ore-Idea peppers & onion hash browns
1 can condensed cream of chicken soup
1/2 cup yogurt or sour cream
2/3 cup diced ham (or so, or chicken, or go meatless)
15 smashed saltines (or so)
2 tablespoons melted butter
In a large bowl, mix together soup and yogurt. Add hashbrowns and ham and stir, then put in an ungreased 13x9 pan. Mix smashed saltines (a great job for kids) and melted butter. Sprinkle on top of hashbrown mixture. Bake in a 375 degree oven for about 35 minutes.
I'm not usually a big fan of cream-of-anything-soup cuisine, but this is a just-fine weeknight meal. It won't win any contests, but it will provide a hot, not that expensive meal. For one of those nights when you're too tired to cook or you need something that requires only 10 minutes of prep time.

We took one of these to Miss Piggy's mother's house this evening for supper, and made two more to sell for our Cub Scout pack's fundraiser. Everybody enjoyed it; thanks!
